Healthy Whole Wheat Flax Pasta Noodle Side-dish

All of my ingredients gathered and prepped for my pasta dish.

Green onions, spinach, tomato, minced garlic, fresh basil, sea salt, pepper and olive oil.

2 nice sized green onions chopped.

Fresh spinach...I used about three "claw" handfuls and sliced it into smaller pieces.

1 large tomato diced.

2 tsp minced garlic.

1 tsp sea salt & 1/4 tsp black pepper.

4 large leaves of fresh basil chopped.

3 tbsp olive oil.

Mix all ingredients with Whole Wheat Flax Pasta Noodles (https://roxannesrandoms.wordpress.com/2012/03/25/whole-wheat-flax-pasta-noodles/).

Dish up and enjoy.

Our supper included our pasta side, a chicken breast cooked in a little olive oil and seasoned with sea salt, pepper, garlic powder, oregano and basil.

We also had a nice little organic salad that included red & green swiss chard, tat soi, arugula & spinach, topped off with a nice little vinaigrette.

Healthy Whole Wheat Flax Pasta Noodle Side-dish

1 large tomato

2 green onions

4 large fresh basil leaves

2 cups packed fresh spinach (3 “claw” handfuls)

2 tsp minced garlic

1 tsp sea salt

1/4 tsp black pepper

3 tbsp olive oil

Cook noodles until they are within a minute of being cooked all the way (or to the point you like them).  Drain noodles and set aside for now.  Add olive oil, green onions, minced garlic, sea salt & pepper to pan that you cooked the noodles in and place over high head, immediately add noodles and stir, add in tomatoes, spinach and basil, cook for about 1 minute making sure to gently stir and combine all ingredients.  Makes 5 servings.  Your pasta side-dish is now complete, dish up and enjoy.
