Orange Zest Sour Cream Ricotta Cookies

Orange Zest Sour Cream Ricotta Cookies

1 cup unbleached white flour

1 tsp baking powder

1/3 cup low fat sour cream

1 tsp vanilla

1/4 cup olive oil

1/2 tsp sea salt

1/4 cup ricotta cheese

1/2 cup organic sugar

orange zest (as much or as little as you like…I zested a medium-sized orange)

 

Place all ingredients in a bowl and mix by hand (that is what I did…helps incorporate everything a little more smoothly).  Pre-heat oven to 350 degrees.  Drop dough by teaspoon full onto ungreased cookie sheet.  Bake for 10-12 minutes.  Makes 2 dozen cookies.

Today’s cookie experiment started out with the intentions of being cupcakes, but quickly became cookies instead (my current lack of eggs in the house assisted in my decision-making process).  Though each cookie is 64 calories (26 of which are from fat) remember that they are still much healthier for you than a Double Stuff Oreo cookie that comes in at a whopping 140 calories per cookie and almost half of those calories are from fat.  As I have said before, moderation, moderation, moderation 🙂  Enjoy.
