Kickin’ Carrot Cupcakes

Kickin’ Carrot Cupcakes

1 large carrot shredded

1/2 cup natural unsweetened applesauce

1/3 cup ricotta cheese

1/3 cup + 1 tbsp honey

1 1/2 tsp baking powder

1/4 tsp allspice

1/4 tsp nutmeg

1/4 tsp ginger

1/2 tsp roasted Saigon cinnamon

1/2 tsp sea salt

1/4 tsp cayenne

1/2 cup whole wheat flour

1/4 cup unbleached white flour

Combine all ingredients in a bowl.  Pre-heat oven to 350 degrees.  Drop by spoonful into prepared mini-cupcake pan.  Bake for 28-30 minutes.  Cupcakes are very moist.  Recipe makes 24 mini cupcakes.

 

Recipe Variations:

General:  If you are not a huge fan of spicy you may want to cut cayenne pepper down to 1/8 tsp or you can completely take it out of the recipe.

Vegetarian:  substitute silken tofu for ricotta cheese.

Vegan:  substitute silken tofu for ricotta cheese and agave nectar for honey (you may only need to use 1/3 cup)
