Coffee Chocolate Cookies

Coffee Chocolate Cookies

2 eggs

2 tbsp instant coffee

1 cup organic sugar

2 ounces semi-sweet bakers chocolate

1/4 cup olive oil

1/2 tsp sea salt

1/2 tsp baking soda

1/2 tsp baking powder

1 cup unbleached flour

Mix eggs, instant coffee, sugar and olive oil together well.  Melt bakers chocolate.  Slowly add melted chocolate to egg mixture whisking continuously as you add chocolate.  Add salt, soda, powder and flour.  Let dough rest for about 10 minutes.  Pre-heat oven to 350 degrees.  Lightly grease a cookie sheet and drop cookie dough by spoonfuls onto sheet.  Bake for 9-11 minutes.  Cookies will puff up while baking and then collapse when you bring them out of the oven, making for a wonderfully soft and chewy cookie (we enjoyed ours with small glasses of Silk…but I am sure they will also be great with coffee).  Makes about 2 dozen nice sized cookies.

Needless to say, these cookies aren’t as healthy as some of the other cookie experiments I have done…so I was somewhat hesitant in posting nutrition facts, but here they are:
